Dynamite Shrimps

If you’ve travelled to Dubai or the States and tried P.F Changs you might have tasted their famous dynamite shrimp starter….succulent shrimp dunked in a siracha mayo sauce (sooo mouthwatering!!) 😍😍 I was having craving for these recently and decided to create the PF Changs inspired dynamite shrimp starter 🍤

This recipe has been highly anticipated on the blog and I’ve finally gotten round to sitting down and writing it up for you all! (I think we’ve all established I’m a bit lazy when it comes to posting blogs for you guys…a bit ironic I know🙈 but better late then never hey) Anyway you can find the recipe down below

Dynamite Shrimps 

Ingredients 

Marinade for prawns
300-400g cooked prawns (by cooked I mean the ones you find at your local supermarket in the freezers which are already semi cooked)
1/2 salt
1/2 tsp garlic
1/2 pepper
1/2 fine chillies
1/2 rough chillies
1-2 tblsp lemon juice
1/2tsp soya sauce

For coating
1/2 cup cornflour
1/2 cup flour
1/4 tsp salt, crushed garlic, salt, pepper and chilli flakes
1 egg beaten

Sauce
1/2 cup mayo
3 tblsp siracha sauce (depending how spicy you want it)
1/4tsp chilli powder (you can omit if your siracha sauce is too spicy)
2 1/2 tsp vinegar
2tsp crushed garlic

1. Marinade prawns in salt, pepper, garlic, soya sauce, lemon juice, rough and fine chillies for about 2-3 hours (the longer the better) then cook till done (roughly 4-5 mins).
2. Once cooked and cooled, dip the prawns in the beaten egg then coat in the flour batter (flour, cornstarch, garlic, salt, pepper, red chilli flakes)
3. Fry till golden brown
4. Mix the mayo, vinegar, siracha , chilli flakes and chilli powder
5. Toss the prawns in the sauce and serve in martini glasses on a bed of lettuce
