Linguine Shrimp Scampi

Weekend meals are probably the hardest struggle of all!! I hope I’m not alone when I say I constantly run out of ideas on what to make! Firstly because who wants to cook on the weekend and secondly I’m tired of eating the same food!! So after much searching and idea suggestions to help make weekend meals easy, quick and tasty I present to you Linguine Shrimp Scampi – a very easy different weekend meal which is quick enough to make whilst still allowing you to get back to your weekend resting 💪🏼

Linguine Shrimp Scampi (serves 4-5)

Ingredients
300g linguine Pasta
3-4 tablespoons unsalted butter
250g medium shrimp, raw and peeled
3 tsp garlic
1 teaspoon crushed red pepper flakes
1/2 brick of vegetable stock dissolved in water (roughly 250ml)
1/2 cup freshly squeezed lemon juice
1tsp salt
1tsp ground black pepper
Zest of 1 lemon
2 tablespoons chopped fresh parsley leaves
1/4 cup freshly grated Cheese

Method
1. In a large pot cook pasta in boiling salted water.
2. Melt butter in a large skillet over medium high heat. Add shrimp, garlic and red pepper flakes.
3. Cook, stirring occasionally, until pink, about 3-4 mins
Stir in dissolved vegetable stock and lemon juice; season with salt and pepper.
4.Bring to a simmer for about 5-7 mins make sure you don’t over cook prawns.
5. Remove from heat and stir in pasta, lemon zest and parsley.
Serve immediately, garnished with Cheese
